What are the summer trends 2015 for
light cuisine?

I think that if this summer is as good as last year's, you need look no further than the barbecue — there are so many great barbecued vegetable dishes that are very low in calories. My trend for 2015 is therefore: vegetables on the barbecue — but don't forget the meat too.

What is Steffen's personal favorite
summer dish?

Spinach salad with red wine vinegar
and olive oil. With some fried shiitake
mushrooms — hey presto!


Which basics should always be in the fridge
for a light summer cuisine?

Lemon, yogurt, tomatoes, spring onions.


Fruits and vegetables — how do you
combine them?

Combining salads with fruit is natural and
easy, for example a lamb's lettuce with fried
chanterelles and raspberries. Taste contrasts
are the backbone of my cooking. More
specifically, the flavor ratio of acidity and fat.

GREEN ASPARAGUS AND MANGO SALAD

Low on carbohydrates, high on filling protein in the chicken. Due to its potassium
content, asparagus has a dehydrating and detoxifying effect. The mangoes promote
vision, ensure beautiful skin and have immune-boosting powers. Light, healthy and
delicious all round!

of protein so leaves you feeling full for long periods
without being heavy on the stomach.

Go light: don't overburden your body with unnecessary digestion.
Avoid heavy meals, especially at night.

 

Food Code: enjoy fruit or vegetables with every meal. For protein,
choose a small piece of fish or meat, cheese, eggs or soy products.
Go easy with filling side dishes such as potatoes, bread, legumes,
pasta, rice and cereals.


Say goodbye to calorie counting: eating in this way makes you slim all
by itself! Three small meals a day at intervals of 4 – 5 hours are best.

 

Go: good fats such as those in fish are desirable in small quantities.
Avoid bad fats in fast and convenience foods.


Vitality kick: instead of fat, use herbs and spices as a natural flavor enhancer — their wonderful aromas and biomaterials make the
body fit.


Be gentle:
"light" cooking methods such as steaming or stewing accentuate the food's taste and preserve important nutrients.
